What Happens When Pasta Meets a Sheet Pan Full of Summer 🍋
This Tuscan-inspired dish is bursting with roasted flavor, fresh herbs, and golden chicken—all tied together with a lemon-Parmesan kiss.
Tuscan Chicken + Roasted Vegetable Pasta Primavera
Yield: 6 servings
1 1/2 pounds chicken breast
2 zucchini, sliced 1/4-inch thick
2 yellow squash, sliced 1/4-inch thick
2 bell pepper (red, yellow, or orange), sliced 1/4-inch thick
1 large red onion, sliced 1/4-inch thick
6 garlic cloves, minced, divided
2 carrots, peeled and thinly sliced
2 tablespoon dried oregano, divided
2 tablespoon fresh thyme leaves
Kosher salt and ground black pepper, to taste
1 pound short pasta of your choice
8 ounces grape tomatoes, halved
1 large lemon, juiced and zested
1/2 cup grated parmesan cheese, plus more for garnish
1/2 cup olive oil, prefer Tuscan flavored, plus more as needed
1/4 cup torn fresh basil leaves
Preheat your oven to 450°F. In a small bowl mix the garlic, oregano, thyme and olive oil. Remove half the olive oil mixture to a large prep bowl. To the large bowl add the zucchini, squash, bell peppers, and onion. Season with a big pinch of kosher salt and black pepper. Toss to coat, adding additional oil as needed. Spread the vegetables on 2 large sheet pan (or 1 Nordic ware Big Sheet) lined with foil or parchment. Set aside.
Add half the lemon mixture to the remaining garlic mixture. Season the chicken breasts well with salt and pepper. Place chicken evenly on top of the vegetable. Pour lemon garlic mixture on top of the chicken. Roast in the preheat oven on the middle rack for 20 minutes. Give the vegetable a stir and continue to roast until the vegetable tender and starting to brown at the edges and the chicken registers 165°F on a thermometer, about 10 to 20minutes more. Remove chicken to a cutting board and set aside. Meanwhile, bring a large pot of water to a boil and season generously with kosher salt. Cook the pasta in salted boiling water according to the package (about 10 to 12 minutes). Reserve one cup of the pasta cooking water and drain. Transfer pasta to a large bowl and season with flavored olive oil, salt and pepper to taste. Add the roast vegetables, tomatoes, basil, and remaining lemon to the bowl. Add a splash of the pasta cooking water and cheese to the bowl and toss to combine. Add additional water as needed. Taste and season with salt and pepper. Slice chicken and place on top of the pasta. Garnish with additional cheese. Enjoy warm.
