These air-fried avocado wedges are your answer. Perfectly crisp on the outside, buttery on the inside, and paired with a sweet, tangy Honey Sriracha Mayo, this feel-good recipe is a fresh twist on comfort food that’s easy to whip up and hard to resist.
Guilt-Free Crispy Avocado Wedges with Honey Sriracha Mayo
Yield: 4 servings
2 large, ripe avocados, but not mushy
1 1/2 cups panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large eggs
Honey Sriracha Mayo (see recipe)
Preheat your air fryer to 390°F. Cut the avocados in half, remove the pit, and slice each half into wedges. In a small bowl, whisk the eggs. In another bowl, mix the panko breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper. Dip each wedge first in the egg mixture, then coat generously with the breadcrumb mixture. Repeat with the remaining wedges. Place the avocado in a single layer in the air fryer basket. (You may need to work in batches depending on the size of your air fryer.) Cook for about 8 minutes or until the wedges are golden and crispy. Cool for 1 to 2 minutes before serving. Enjoy warm with Honey Sriracha Mayo.
Chef Stacy Tip: If you do not have an air fryer or wish to deep fry your avocados, add 1/2 cup of all-purpose flour to your recipe. Dip each avocado wedge first in the flour, then the egg mixture, and lastly the breadcrumb mixture. Repeat with the remaining wedges. In a large cast-iron skillet, add enough vegetable oil (or avocado, peanut, or canola oil) to coat the bottom by 1-inch. Heat over medium-high heat until a fry thermometer reaches 350°F. Add the avocado wedges but do not overcrowd the pan. Cook in the hot oil for 1 to 2 minutes, just until the crust sets. Gently flip over and cook for another 1 to 2 minutes. Remove with a slotted spoon or spider and place on a clean wire rack over a rimmed sheet tray . Repeat with the remaining wedges.
Honey Sriracha Mayo
Yield: about 1/2 cup
1/3 cup favorite mayonnaise
1 to 2tablespoons Sriracha sauce
2 teaspoons honey
1 1/2 teaspoon lemon juice or lime juice
1 clove garlic pressed or minced
1/2 teaspoon grated fresh ginger
Kosher salt and freshly ground pepper, to taste
Add the mayonnaise, sriracha sauce, lemon juice, honey, ginger, and garlic to a medium-sized bowl. Whisk to combine until all of the ingredients are well blended. Taste and add salt and pepper as needed. Store in an air tight container in the refrigerator untilready to use.
