Roasted corn still in the husk, sweet pepper charred to smoky perfection, and all the limey, herby, cumin-spiced dressing goodness your summer plate craves. This isn't just a salad — it's a moment.
Roasted Corn and Black Bean Salad
Yield: 6 servings
1 16-ounce can black beans, drained and rinsed
4 ears corn, husks on
1 large red bell pepper
½ red onion, finely chopped
½ cup chopped fresh cilantro
¼ cup avocado or grapeseed oil, plus more for brushing
1/4 cup fresh lime juice
1 teaspoon ground coriander
1 teaspoon ground cumin
2 teaspoons honey
Salt and pepper, to taste
Preheat oven to 400F. Soak onion in ice water for 5 to 10 minutes, set aside. In a small bowl, whisk together the lime juice, honey, cumin, coriander, and oil. Season with salt and pepper to taste. Set aside.
Place corn (husks on) and bell pepper on a sheet tray with foil. Brush lightly with avocado oil. Roast the corn and pepper until the husks and skin are blackened and the corn is cooked through. Place the pepper a heat proof bowl and cover with a lid or plastic. Set aside for 10 minutes, or until cool to the touch. Let the corn cool and remove the cobs with a sharp knife or corn peeler. Place kernels in large bowl.
Once cool, remove skin, stem, seeds, and membrane from the pepper and finely chop. Add to corn. Add black beans, onion, and cilantro to corn mixture. Dress with lime juice mixture. Allow to stand for 15 minutes to 1 hour for the flavor to meld. Enjoy with favorite summertime protein (like my Grilled Chicken Skewers with Honey Peach Glaze).
