The PEach Glaze Craze You Didn’t Know You Needed 🍑
Meet your new summer obsession: juicy grilled chicken strips slathered in a honey-peach glaze made from real fruit and pantry staples. 🍯 This easy skewer recipe comes together quick and is perfect for weeknight dinners or weekend gatherings.
Grilled Chicken Skewers with Honey Peach Glaze
Yield: 4 servings, 8 to 10 skewers
2 tablespoons smoked paprika
1 tablespoon favorite honey
1 tablespoon ground cumin
1-1/2 teaspoons ground cinnamon
1 tablespoon garlic powder
1 tablespoon kosher salt, plus more as needed
1 tablespoons freshly ground black pepper, plus more as needed
Zest and Juice of 1 lime or lemon
1 lb boneless, skinless chicken breasts, into 1/4-inch strips
4 tablespoons avocado (or favorite high-smoking) oil, plus more for brushing grill grates
Honey Peach Glaze
1 red onion, trimmed, peeled, and cut into 1/4-inch pieces
1 garlic clove, minced or pressed
4 large firm-ripe peaches, skinned, seeded, and cut into 1/2-inch thick slices
1/2 cup honey
1/2 cup apple cider vinegar
2 cups chicken stock
If using bamboo skewers, soak 8 long (12-inch+) or 10 medium in water for at least 1 hour before using. In a medium bowl with lid, mix together paprika, 1 tablespoon honey, cumin, cinnamon, garlic powder, salt, pepper, lemon juice and zest, and enough avocado oil to form a thick paste. Add sliced chicken breasts to spice paste and stir to coat all over chicken. Cover with lid and let marinate for 30 minutes and up to 1 hour.
Meanwhile add oil into a large skillet over medium-high heat until oil begins to shimmer. Add red onion, peaches, salt and pepper and cook, stirring occasionally, until they begin to brown. Add honey, chicken stock, and vinegar and reduce mixture by half, about 10 to 12 minutes. Reduce heat to medium-low and simmer the glaze until it is reduced by half again, about 10 minutes more. Remove from heat, taste, and season with salt and pepper. Set aside to cool.
Thread chicken onto soaked bamboo or stainless skewer so it lays flat. Heat a charcoal grill to medium heat, preheat a gas grill to medium heat, or heat a grill pan over medium heat. Brush grill grates or pan with avocado oil. Cook chicken skewers, flipping once, until chicken registers 160 F on a probe thermometer until cooked through, about 5 to 6 minutes per side. To serve, arrange the skewers on a serving platter and brush with peach glaze. Serve immediately, passing remaining glaze in a serving bowl for dipping.
