A Brighter Kind of Pesto 🌿💚

Summer is generous, and this recipe celebrates every bit of it. ☀️ Fresh peas, fragrant parsley, toasted walnuts, and lemon zest come together in a pesto that's lighter than the classic but every bit as satisfying. It's fresh, comforting, and made for slow summer evenings around the table. 🍝

Pea and Walnut Pesto with Fettuccine

Yield: 4 to 6 servings

2 cups fresh peas, shelled

2 cups packed fresh parsley leaves

1/2 cup walnuts, toasted

2/3 cup grated Parmesan, plus more for serving

3 garlic cloves, smashed and peeled

1/3 cup extra virgin olive oil

Zest of 1 lemon

Kosher salt and freshly ground black pepper

1 pound dry fettuccine

Bring a saucepan of water to a hard boil. Salt water and boil the peas for about 60 seconds, or until they rise to the top. Remove from the heat and drain immediately. Set aside to cool completely.

In a food processor, combine 1 cup cooked peas (reserve 1 cup for serving), parsley, walnuts, parmesan, garlic, lemon zest, and 1 tablespoon water. Pulse until a paste forms. With machine running, slowly add oil, processing until blended. Taste and season with salt and pepper.

In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1 cup pasta water; drain pasta. Return pasta and remaining 1 cup peas to the pot. Add pesto and enough pasta water to create a sauce that coats the pasta. Taste and season with salt and pepper, as needed. Serve pasta with more parmesan. Enjoy warm.
