Corn Deserves Better Than Plain Butter 🌽😉

Fresh summer corn is already pretty close to perfect, but a flavored butter takes it somewhere unforgettable. 💛 Honey Shallot Butter brings richness with just a touch of sweetness, while Chipotle Lime Butter adds smoky heat and bright citrus. Whether you're firing up the grill for family dinner or a backyard cookout, this is the kind of recipe that reminds us how a few thoughtful ingredients can completely transform a classic. 🌞🧈

Grilled Corn on the Cob

Yield: 6 servings

2 tablespoons chopped fresh thyme or 2 teaspoons dried

6 to 8 ears of fresh corn, shucked

1 tablespoon avocado oil

Honey Shallot Butter

8 tablespoons (1 stick) butter, room temperature

2/3 cup chopped shallots (about 3 ounces)

1 tablespoon honey

Chipotle Lime Butter

8 tablespoons (1 stick) butter, room temperature

1 tablespoon chopped chipotle peppers in adobo

1 tablespoon lime zest

1/8 tsp ground cumin

Preheat grill to medium heat. Remove husks and silk from corn. Brush each piece with avocado oil. Place corn directly on the grill and cook for 10-15 minutes turning occasionally. Remove from grill and serve with choice of butter, salt and pepper to taste.

Honey Shallot Butter

Melt 2 tablespoons butter in heavy small skillet over medium heat. Add shallots and sauté until golden brown, about 4 minutes. Add the thyme and remove from the heat. In a bowl, combine shallots with the remaining butter and honey and mix well. Season to taste with salt and pepper. Bush heavily onto warm corn. Serve with extra butter.

Chipotle Lime Butter

Melt 2 tablespoons butter in heavy small skillet over medium heat. Add chipotle peppers and sauté until fragrant. Add lime zest and remove from the heat. In a bowl, combine chiles with the remaining butter and cumin and mix well. Season to taste with salt and pepper. Bush heavily onto warm corn. Serve with extra butter.
