A refreshing summer salad to balance your next backyard feast 🍉

Juicy heirloom tomatoes and sweet watermelon come together with creamy marinated fetta in this crowd-pleasing salad. It’s a refreshing bite next to smoky BBQ pulled pork. 🍖

Watermelon and Tomato Salad with Marinated Fetta

Yield: 4 to 6 servings


3 pounds seedless watermelon, cut into 1-1/2 inch chunks, about 4 cups

2 pounds assorted colors heirloom tomatoes, cut into 1-1/2 inch chunks, about 3 cups

¼ cup extra-virgin olive oil, plus more as needed

¼ cup balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

1 bunch basil, sliced into thin ribbons

1 bunch mint, sliced into thin ribbons

3 cups arugula leaves

3 oz favorite fetta, crumbled

favorite sea salt and freshly ground pepper, to taste

Slice the watermelon and cored tomatoes into 1-1/2-inch chunks. Add the melon mixture together in a large bowl with about 1/2 teaspoon of sea salt. Let the mixture stand at room temperature for 10 minutes. Meanwhile, in a small mixing bowl, whisk together oil, vinegar, honey, and mustard. Taste and season with salt and pepper. Mix half of the dressing with the fetta. Set aside to marinate.

To serve, fold in the herbs into the remaining dressing. Fold the herb mixture together with the melon and tomatoes. Taste and season with additional salt and pepper as needed. Toss arugula in medium bowl with a drizzle of olive oil. Divide greens evenly among chilled salad plates. With a slotted spoon, top the greens with the melon salad. Divide the feta cheese amongst the plates and finish with sea salt, if desired.
