🪄 Homemade Caramel Dreams
There’s something magical about stirring sugar, cream, and vanilla into pure golden bliss. ✨ Each bite of these Vanilla Bean Caramels is soft, buttery, and just salty enough to make you close your eyes in delight. 😋
Vanilla Bean Caramels
Yield: 8x8 pan, about 18 pieces
1 cup (8 oz) heavy cream
1 cup (8 oz) granulated sugar
1/4 cup (4 oz) corn syrup
1 1/2 teaspoon vanilla bean paste
3 tablespoons (1 1/2 oz) unsalted butter, room temperature
Non-stick cooking spray
Favorite flake sea salt, prefer Maldon, optional
Spray an 8x8 cake pan with non-stick cooking spray. Line baking pan with parchment paper and spay paper again. Bring the cream, sugar, corn syrup and vanilla bean paste to a boil in a heavy saucepan set over medium-high heat. Cook until the mixture reaches 245°F (118°C) on a candy thermometer. Stir in the butter and continue cooking until the mixture returns to 245°F (118°C).
Carefully pour the mixture into the prepared pan. Let caramel cool until just set, sprinkle with sea salt if desired. Allow the caramel to cool and firm, then cut it into 1 1/3-inch (3.4-centimeter) squares. Wrap each caramel in cellophane or wax paper, if desired. Enjoy!
