Don’t sweat dinner tonight — this easy recipe is perfect for hectic summer evenings. In just 30 minutes, you’ll have saucy noodles, oven-baked salmon, crisp veggies, and a punch of flavor that tastes like takeout (but better). 🌶️🍴
Thai Peanut Noodles with Baked Sweet Chili Salmon
Yield: 4 servings
Peanut Sauce:
1/2 cup natural peanut butter, smooth
1/4 cup filtered water
1/4 cup soy sauce or tamari
2 tablespoons fresh lime juice
3 table spoons honey
1 tablespoon sesame oil
1-3 teaspoons Sriracha hot sauce
Sweet ChiliSauce:
1 teaspoon freshly minced ginger
2 tablespoons soy sauce or tamari
2 tablespoons fresh lime juice
½ cup favorite Thai sweet chili sauce
1 lb salmon filet, skinless, cut into 4 portions
Kosher salt, to taste
8 ounces spaghetti noodles or rice noodles
1 cup shelled edamame
1 cucumber, thinly sliced
2 carrots, shredded or julienned
1 red bell pepper, seeded and thinly sliced
2 green onions, thinly sliced
1/4 cup chopped cilantro
1/4 cup chopped roasted peanuts
1 lime cut in wedges
Preheat oven to 375º. Line a baking sheet with parchment paper. In a small/medium bowl, whisk together the Sweet Chili Sauce ingredients. Place salmon onto the prepared baking sheet and season with salt. Spoon or brush the chili sauce evenly over the salmon, making sure the whole surface is covered. Place in the oven and bake for 15-18 minutes depending on desired doneness.
Meanwhile, in a small/medium bowl, whisk together all the peanut sauce ingredients until smooth. Taste and adjust sriracha as desired. Set aside. Cook the noodles according to the package instructions, then drain. In a large bowl add the cooked noodles and half the peanut sauce. Toss and add additional sauce as needed. Divide noodles evenly onto 4 plates or pasta bowls. Top noodles evenly with edamame and remaining vegetables, cilantro, and peanuts. Serve immediately with baked salmon and lime wedges. Enjoy!
