Harissa Lamb Burger with Creamy Feta Tzatziki

Yield: 4 servings

1-1/2 pounds ground lamb

2 tablespoons mild or spicy harissa

2 teaspoons of Raz EL Hanout spice blend

1/2 cup Greek yogurt

1/2 cup feta, prefer a creamy feta like Meridth Dairy Marinated Feta

1/4 cup Persian or English cucumber, chopped

1/8 cup mint, rolled and sliced

Kosher salt and freshly ground black pepper, to taste

4 favorite hamburger buns

Avocado oil, as needed

In the bowl of a food processor, add the yogurt and feta. Process until combined and smooth. Add the cucumber and mint. Pulse the mixture just enough to combine the ingredients but keep the cucumber and mint in pieces. Taste and season lightly with salt and pepper. Cover and rest in the refrigerator for 20 minutes for the flavors to develop.

Combine, in a medium mixing bowl, the lamb, Raz EL Hanout, and harrisa. Portion into 4 patties and season lightly with salt. Place burgers in a heated cast iron skillet coated lightly with grapeseed oil. Cook, flipping once, until well browned, about 3 to 4 minutes on each side for a medium-rareburger. Place the buns face down in the remaining oil until toasted and lightly browned.

To serve, place the burger on the bottom of each bun and top each with the feta tzatziki and any condiments desired. Cover with toasted bun tops and serve immediately.
