Let the Grill Bring It to Life 🔥
This is where fresh meets flame 💛 Crisp-tender vegetables, just lightly charred, layered with herbs and a citrusy dressing that ties everything together. The tomatoes soak up flavor on their own, adding a soft, juicy contrast to the grilled edges. It’s vibrant, satisfying, and the kind of dish you keep going back to—forkful after forkful 🍋
Grilled Vegetable Salad with Lemon Herb Dressing
Yield: 4 to 6 servings
Dressing
3 tablespoons apple cider vinegar
2 teaspoons honey
1 shallot, finely chopped
1 garlic clove, minced
1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh dill
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
3/4 cup extra-virgin olive oil
Vegetables
1 lb asparagus spears, trimmed
8 green onions
2 medium zucchini, each cut lengthwise into 1/3-inch-thick slices
2 large ears of corn, husked
5 ounce favorite spring salad mix
8 oz plum tomatoes, halved lengthwise
Avocado oil (for brushing)
Combine vinegar, shallot, garlic, herbs, honey, mustard and lemon juice in medium bowl. Gradually whisk in oil to create an emulsion (thick dressing). Taste and season with salt and pepper. Pour half the dressing over the sliced tomatoes. Set aside until ready to serve.
Prepare barbecue or indoor grill to medium-high heat. Arrange all vegetables on baking sheets. Lightly brush all vegetables with oil, and sprinkle with salt and pepper. Grill asparagus, green onions, zucchini, and corn until lightly charred and just tender, turning occasionally, about 5 minutes for green onions, 8 minutes for asparagus and zucchini, and 10 minutes for corn. Return vegetables to same sheet pan. Season with salt and pepper and set aside to cool.
Cut asparagus, green onions, and zucchini into 1-inch pieces and add to a large bowl. Cut corn kernels from cobs; add to bowl. Using slotted spoon, add tomatoes to bowl. Add the salad greens and toss to combine. Taste and add more dressing as needed. Enjoy room temperature.
