Summer's Easiest Dessert 🍑

When peaches are at their summer best, you don't need to do much to make them shine. 💛 A little vanilla, brown sugar, lemon, and butter transform them into tender, caramelized bites of sunshine. Add a scoop of cold vanilla ice cream and let that sweet-and-creamy contrast do its thing. 🍨 Simple, seasonal, and exactly the kind of dessert worth slowing down for.

Baked Peaches with Ice Cream

Yield: 4 servings

4 peaches, prefer freestone

1 tablespoon Vanilla bean paste

1/4 cup light brown sugar or honey

1 lemon

1/4 cup unsalted butter or coconut oil, plus more for pan

Favorite vanilla ice cream

Favorite fresh berries, optional

Preheat oven to 350°F. Cut the peaches in half and remove the pits. Place them cut side up in a well-buttered 9x13 baking dish.

In a medium bowl, juice the lemon. Add the sugar (or honey) and vanilla paste. Stir until combined. Sprinkle/pour evenly over the peaches. Place 1 tablespoon of butter (or coconut oil) in the center of each fruit half, and bake in the preheated oven until tender and lightly browned, about 20 minutes. Serve with ice cream and fresh berries, if desired.
